BAIGAN KA BHATRA
 
" A Simple Way to prepare Baigan Ka Bharta."
 
Serves 4
 
INGREDIENTS
1 ½ Kg- Brinjal ( Hindi Term Baigan, Cut in Cubes,Pressure Cooked with little Water for 2-3 Whistles )
2 Tbsp- Oil
1 Tsp- Cumin Seeds
A Pinch- Asafoetida
1 Tsp- Chopped Green Chillies
1 Tsp- Chopped Gimger
½ Tsp- Chopped Garlic
1 Tcup- Sliced Onion
1 Tcup- Sliced Tomato
¾ Tcup- Peas
2 Tsp- Salt
2 Tsp- Red Chilli Powder
1 Tsp- Mango Powder
1 Tsp- Coriander Powder
½ Tsp- Garam Masala Powder
½ Tcup- Chopped Coriander Leaves

METHOD
1. Heat Oil in a Kadhai and then add Cumin Seeds,Asafoetida,Green Chilli,Ginger and Garlic and sauté well.
2. Next add Onions to it and sauté well.
3. Add Tomatoes to it and fry well.
4. Add the pressure cooked Baigan to it and mix well .
5. Add all the Indian Spices to it and mix well.
6. Add Green Peas to it and mix.
7. Check the Seasoning and adjust accordingly.Add Coriander Leaves to it and mix well.
8. Seve hot garnished with Chopped Coriander Leaves.
