GATTA KI SABZI
 
" A Very Common Type of Rajastani Dish."
 
Serves- 5
 
INGREDIENTS
Gatta
120 gms- Gramflour ( Hindi Term Besan )
½ Tsp- Salt
1 Tsp- Ghee
½ Tsp- Red Chilli Powder
¼ Tsp- Cumin Seeds
¼ Tsp- Turmeric Powder
 
Gravy
2 Tbsp- Oil
½ Tsp- Cumin Seeds
A Pinch Asafoetida
¼ Tsp- Mustard Seeds
1 No- Bay Leaf
½ Tcup- Finely Chopped Onions
½ Tcup- Finely Chopped Tomatoes
½ Tsp- Salt ( To Taste )
½ Tsp- Red Chilli Powder
½ Tsp- Coriander Powder
½ Tcup- Well Beaten Curd
¼ Tsp- Turmeric Powder
Water- To Get The Desired Consistency
¼ Tcup- Chopped Coriander Leaves

METHOD
Gatta
1. Mix Besan,Salt,Red Chilli Powder,Ghee,Turmeric Powder and Cumin Seeds.
2. Knead into a Stiff Dough and then break the Dough into lime size pieces.
3. Roll out each piece into cylindrical strip.
4. Heat about 5 Tcup Water and cook the strips in it for 10 minutes.Strain and then cut the strips into round pieces.Keep aside.
 
Gravy
1. Heat oil in a pan and then add Asafoetida to it. Add Bay Leaf,Mustard Seeds and Cumin Seeds to it.
2. Next add Onions to it and sauté well.Add Tomatoes to it and fry well till oil separates from the Gravy.Add the Gattas to it and stir well.
3. Add the Indian Spices and mix well.Add Curd and mix well.
Add Water according to the Consistency needed.Stir well.
4. Check the Seasoning and adjust accordingly.Add Coriander Leaves and mix.
5. Serve hot garnished with Chopped Coriander Leaves.
