" Gujrati Style Green Beans."
Serves-4
 
INGREDIENTS
450 gms-Fresh Green French Beans
4 Tbsp- Oil
1 Tbsp- Mustard Seeds
5 Cloves- Garlic ( Peeled,Chopped Very Finely )
2 Nos- Whole Red Chilli ( Coarsely Crushed in a Mortar )
1 Tsp- Salt ( To Taste )
½ Tsp- Sugar
Freshly Ground Black Pepper- To Taste
2 Tbsp- Finely Chopped Coriander Leaves
 
METHOD
1. Trim the Beans and Cut them into 1 Inch Length.
2. Blanch the Beans.
3. Heat Oil in a Kadhai and then to it add Mustard Seeds.As they start to Crackle add Garlic to it and sauté until they are Light Brown in Colour.
4. Add Crushed Red Chilli and Stir for a Few Seconds.
5. Next Add Green Beans,Salt and Sugar.
6. Turn the Beans Occasionally Until all the Spices get absorbed in the them and they get Cooked.
7. Add Black Pepper and also Chopped Coriander Leaves.
8. Check the Seasoning and Adjust Accordingly.
9. Serve Hot.
