KUMDA ALOO KI SABZI
 
" Taste of Pumpkin and Potatoes in a Light Gravy."
 
Serves 6
 
INGREDIENTS
250 gms- Pumpkins
250 gms- Potatoes
3 Tbsp- Oil
A pinch- Asafoetida
¼ Tsp- Mustard Seeds
¼ Tsp- Cumin Seeds
¼ Tsp- Nigella Seeds ( Hindi Term Kalonji )
¼ Tsp- Fenugreek Seeds
2 Nos- Bay Leaf
1 Tsp- Finely Chopped Green Chillies
1 ½ Tsp- Salt
1 Tsp- Coriander Powder
1 Tsp- Mango Powder
1 Tsp- Red Chilli Powder
½ Tsp- Turmeric Powder
Water to Pressure Cook
4 Tbsp- Chopped Coriander Leaves
 
Garnish
Chopped Coriander Leaves
 
METHOD
1. Cut Pumpkin and Potatoes into medium size pieces.
2. Heat Oil in a pressure cooker and add Asafoetida,Bay Leaf,Nigella Seeds,Cumin Seeds,Fenugreek Seeds and Mustard Seeds.
3. Add Green Chillies and then add Potatoes and Pumpkin to it.
4. Add Salt and Turmeric Powder to it and also add Water.Pressure Cook for 1 Whistle.
5. Open the Cooker and then add Coriander Powder,Mango Powder and Red Chilli Powder to it.
Mix gently and add more Water if needed to get the desired consistency.Add Coriander Leaves and mix well.
6. Check the Seasoning and adjust accordingly.
7. Serve hot garnished with Chopped Coriander Leaves.
