MATAR KA HALWA
 
" A Halwa with a Difference."
Serves 6-8
 
INGREDIENTS
1 Litre- Milk
1 ½ Tcup- Shelled Peas ( Boiled in water for 5 minutes,drained,cooled and then made to paste with little water )
2 Nos- Cardamom
2 Tbsp- Ghee
¼ Tsp- Saffron dissolved in 4 Tbsp Warm Milk
250 gms- Grated Khoya
1 Tcup- Sugar
2-3 Drops- Green Food Colour
8-10 Pcs- Raisins
8-10 Pcs- Cashewnuts
10-12 Pcs- Each of Pistachio,Almonds soaked in water and then skin removed and shredded
1 Tsp- Cardamom Powder

METHOD
1. Heat 2 Tbsp Ghee in a Kadhai and then add cardamom to it.Saute green peas in it properly so that the raw flovour of the peas neutralizes.Keep aside.
2. Heat milk in a kadhai and then after it boils a bit add the sauted green peas to it.
3. Stir well and then add 125 gms grated khoya to it and mix well.
4. Add kesar and mix well.Stir occasionally and see that the milk does not stick to the bottom and it starts getting a bit thick.
5. When the mixture becomes a bit tight,add sugar,125 gms khoya,green food colour,dry fruits and cardomom powder.
6. Check the sweetness and adjust.Stir well and see that the halwa consistency is obtained.
7. Take it out into the serving platter and decorate with dry fruits,rose petals,silver varak.Serve hot or cold as per liking.
