Masala Dosa
"It is the most common Dish that is asked for in a South Indian Restaurant."
 
Makes 15 Dosas of Medium Size.
 
INGREDIENTS
 
Batter
3 Tcups- Sela or Ushna Chawal ( Parboiled )-Rice of ordinary quality
1 Tcup-Split Black Gram Daal ( Hindi Term Dhuli Urad Daal )
2 Tsp- Fenugreek Seeds ( Hindi Term Methi Dana )
2 Tsp- Salt ( To Taste )
Oil for making Dosas
 
Potato Masala
4 Nos- Medium Size Potatoes ( Pressure Cooked, Peeled )
3 Tbsp- Oil
1 Tsp- Mustard Seeds
3 Nos- Whole Red Chilli
1 Tsp- Bengal Gram Daal ( Hindi Term Chane Ki Daal )
5-6 Nos- Curry Leaves
1 No- Green Chilli ( Finely Chopped )
1 Tsp- Chopped Ginger
1 Tbsp- Broken Cashewnuts
¼ Tcup- Shelled Peas
1 No- Onion ( Chopped )
¼ Tsp- Turmeric Powder
¼ Tsp- Red Chilli Powder
1 Tsp- Salt ( To Taste )
1 Tbsp- Lemon Juice
2 Tbsp- Chopped Coriander Leaves
 
METHOD
Batter
1. To make the Batter,soak Daal, Rice, Fenugreek Seeds in Water for about 8 Hours.
2. Grind to a Paste to get a Batter of Medium Pouring Consistency.
3. Add Salt and mix well.
4. Keep aside in a warm place to ferment for about 12 Hours. It should smell sour after fermenting.
 
Potato Filling
1. Heat Oil in a Kadhai and then to it add Mustard Seeds, Chane Ki Daal and also Whole Red Chilli .
2. Add Curry Leaves,Ginger,Green Chillies and sauté well.
3. Add Onions to it and sauté well till Golden Brown. Add Cashewnuts, Salt, Turmeric Powder and Red Chilli Powder.
4. Add 1 Tcup Water to it and cover and cook till the Daal gets soft.
5. Roughly mash the Potatoes and add to it.Cook well and then add Green Peas to it. Next add Lemon Juice and Chopped Coriander Leaves to it.
6. Mix well and see that the Filling is ready. Check the Seasoning and adjust accordingly.
7. Keep aside.
 
Making Dosas
1. Mix the Batter nicely with a Ladle.
2. Heat a Non- Stick Tawa on medium heat.Pour 1 Tsp Oil on a Tawa.Wipe it with a wet cloth.
3. Pour ½ Tcup Batter on the Tawa and spread it well with a karchhi.Cook well.
4. Pour some oil on the side of the Dosa and then when it gets a bit cooked then loosen the sides and the bottom.
5. Put about 2-3 Tbsp of the prepared Potato Filling in the centre of it and then fold over from both sides.
6. Remove from the Tawa and Serve hot with Coconut Chutney and Sambhar.
7. Repeat for all other Dosas.
