MUGHALAI KOFTA CURRY
 
" Double Coloured Koftas in a Mughalai Gravy."
 
Makes approximately 16 Pieces.
 
INGREDIENTS
Koftas
Outer Covering
5 Nos- Medium Size Potatoes ( Pressure Cooked,Mashed )
1 Tcup- Grated Paneer
5 Tbsp- Cornflour
1 Tbsp- Ginger and Green Chilli Paste
½ Tsp- Salt ( To Taste )
1 Tbsp- Chaat Masala
1 Tbsp- Chopped Corinader Leaves
 
Inner Filling
50 gms- Grated Khoya or 5 Tbsp- Milk,Mawa Mixture
¾ Tcup- Blanched Peas
15 Pcs- Cashewnuts ( Chopped Finely )
4 Nos- Cardamom ( Pounded )
8 Nos- Pistachioes ( Chopped )
½ Tsp- Salt
Oil For Deep Frying The Koftas
 
Gravy
3 Tbsp- Oil
2 Nos- Onion ( Grated )
3 Nos- Tomatoes ( Grated )
½ Tsp- Roasted Coriander Seeds, ½ Tsp- Roasted Cumin Seeds,4 Nos- Green Chillies, 1 inch piece Ginger,2 Tbsp- Chopped Mint Leaves,2 Tbsp- Chopped Coriander Leaves ( Made to Paste with little Water )
50 gms- Grated Khoya or 5 Tbsp- Milk Mawa Mixture
1 ½ Tsp- Salt ( To Taste )
1 Tsp Each of Red Chilli Powder,Garam Masala Powder,Coriander Powder,Mango Powder,Turmeric Powder,Sugar
1 ½ Tcup- Water
2 Tbsp- Chopped Coriander Leaves
2-3 Drops- Orange Food Colour ( Optional )
2-3 Tbsp- Cream
 
Garnish
Chopped Coriander Leaves
Butter
Garam Masala Powder ( To Sprinkle )
 
METHOD
 
Koftas
1. For making the outer covering of the Koftas,to the Mashed Potatoes add Grated Paneer,Cornflour,Ginger and Green Chilli Paste,Salt,Chaat Masala,Coriander Leaves and mix well.
2. For making the inner covering of the Koftas,Mix Grated Khoya with Peas,Cashewnuts,Pistachioes,Cardamom,Salt and keep aside.
3. Next take some amount of Potato Mixture and fill in with the Khoya Mixture in the centre.Form round balls out of it and Deep Fry in hot oil till golden brown.Drain well on a tissue and keep aside.
4. The size of the Koftas could be varied according to the size needed.
 
Gravy
1. Heat oil in a Kadhai and then sauté Grated Onion in it.Next add Grated Tomatoes and sauté well.
2. Add the Grounded Spices Paste and fry well.
3. Next add Grated Khoya and mix well.Add Indian Spices,Salt and mix well.
4. Next add Water and mix.
5. Add Cream,Food Colour,Coriander Leaves and mix well.
6. Check the Seasoning and adjust accordingly.
 
For Serving,Cut the Koftas in half and place them in a serving dish.Pour Hot Gravy over the Koftas.Serve hot garnished with Chopped Coriander Leaves,Melted Butter and also sprinkle some Garam Masala Powder on the Koftas.
