GOANESE DISHES
 
PRAWN BALCHAO
 
" A Typical Goanese Prawn Preparation which is Tangy in Taste."
Serves-4
 
INGREDIENTS
1 Kg- Small Size Prawns
½ Tsp- Peppercorns
10 Nos- Cardamom
2 Inch- Cinnamon Stick
10 Nos- Cloves
10 Nos- Curry Leaves
½ Tsp- Cumin Seeds
1 Tbsp- Ginger Paste
2 Tbsp- Garlic Paste
2/3 Tcup- Oil
2/3 Tcup- Malt Vinegar
2/3 Tcup- Chopped Onions
15 Nos- Whole Red Chilli
5 Tsp- Sugar
Salt- To Taste
½ Tcup- Chopped Tomatoes
 
METHOD
1. Shell,Devein and Pat dry Prawns.
2. Blend the Peppercorns,Cardamoms,Cinnamon,Cloves,Cumin Seeds and Red Chilli along with Vinegar in a Blender and Keep Aside.
3. Heat Oil in a Kadhai and then Deep Fry Prawns in it till Golden Brown.Remove and Keep aside.
4. Add Onions to the Hot Oil in the Kadhai and saute well till Golden Brown and then add Ginger and Garlic Pastes to it.Stir for a Minute and then add Chopped Tomatoes to it and also the Blended Paste.
5. Stir for 2-3 Minutes and add Fried Prawns ,Curry Leaves,Sugar and Salt.
6. Cook well till the Prawns become Tender.
7. Check the Seasoning and adjust accordingly.
8. Serve Hot with Boiled Rice or any Indian Bread.
