PINEAPPLE FREEZE

Serves 10 Mini Pudding Cases
 
INGREDIENTS
2 Tup- Milk
4 Tbsp- Sugar
2 Rings of Tinned Pineapple- Chopped Finely
1 Tbsp- Gelatin mixed with 4 Tbsp- Water ( Mixed in a Double Boiler )
4 Drops- Pineapple Essence
3 Drops- Yellow Food Colour
3 Tbsp- Pineapple Squash
1 Tcup- Vanilla Icecream
3 Tbsp- Unbeaten Cream
7 Nos- Pineapple Sandesh ( 2 for making the puddind and 5 for garnish )

METHOD
1. Boil milk in a Pan for about 15 minutes.Stir continuously and then add sugar,2 Pieces of Chopped Sandesh and stir well.
2. Remove from fire and then gelatin,chopped pineapple,colour,essence,icecream,squash,cream and mix well.
3. Set in small pudding bowls in the fridge and when half set then press sandesh pieces on it.Cut the sandesh in half for garnish.
4. Keep it in the fridge and let it set well for 3 hours.Serve chilled garnished with chopped pistachios,rose petals,chopped pineapple.
