RAJASTHANI ALOO DUM

Serves 6
 
INGREDIENTS
400 gms- Small Size Potatoes
2 Nos- Onions
2 Nos- Tomatoes
2 Nos- Green Chilli
1 Tbsp- Ginger and Green Chilli Paste
3 Tbsp- Oil
1 Tsp- Cumin Seeds
3 Tbsp- Poppy Seeds Paste ( Hindi Term Khuskhus )
2 Tsp- Salt ( To Taste )
1 Tsp- Red Chilli Powder
½ Tsp- Coriander Powder
1 Tsp- Garam Masala Powder
½ Tsp- Turmeric Powder
2 Tcup- Water
2 Tbsp- Chopped Coriander Leaves
Oil for Deep Frying the Potatoes

METHOD
1. Peel the Potatoes and deep fry them in hot Oil till golden brown.Drain well and keep aside.
Make a Paste of Onions,Tomatoes and Green Chilli and keep aside.
2. To prepare the Gravy,Heat Oil in a Pan and then add Cumin Seeds to it.
Next add the prepared Paste to it and fry well.
3. Add Poppy Seeds Paste to it and sauté well.Add all the Indian Spices and mix well.
4. Add Fried Potatoes to it and cook for a few minutes.
5. Add Water to it and let the Potatoes simmer well in the Gravy and get cooked.
6. Add Coriander Leaves and mix well.Check the Seasoning and adjust accordingly.
7. Serve hot garnished with Chopped Coriander Leaves.
