SHAHI MATAR PANEER
 
" Cubes on Paneer in a Smooth Gravy."
Serves 4-6
 
INGREDIENTS
300-350 gms- Cubes of Paneer,Cut in Cubes of ½ Inch
Oil for Deep Frying the Paneer
Gravy
3 Tbsp- Oil
4 Nos- Green Chillies ( Finely Chopped )
½ inch- Ginger ( Finely Chopped )
4 Nos- Cardamom
1 Tsp- Cumin Seeds
1 No- Large Tomato,1 No-Large Onion,4-5 Flakes Garlic- Made to a Thick Paste
1 Tsp each of Salt,Red Chilli Powder,Coriander Powder
½ Tsp- Turmeric Powder
¼ Tcup- Well Beaten Curd
1 Tcup- Shelled Peas
1 ½ Tcup- Water
1 Tsp- Garam Masala Powder
2-3 Drops- Orange Food Colour
¼ Tcup- Fresh Cream
4 Tbsp- Chopped Coriander Leaves
Tempering
1 Tbsp- Ghee
½ Tsp- Red Chilli Powder
Garnish
Chopped Coriander Leaves
Fresh Cream
 
METHOD
1. Heat Oil in a Kadhai and then Deep Fry Paneer Cubes in it till golden brown.Drain well on a tissue and keep aside.
2. For making the Gravy,Heat Oil in a Kadhai and add Green Chilli,Ginger,Cardamom and Cumin Seeds to it.Saute well and then add the prepared Paste to it.
3. Fry the Paste well and then add Salt,Red Chilli Powder,Coriander Powder and Turmeric Power to it.
4. Fry well till the Oil leaves the Gravy.
5. Next add Curd to it and also add Paneer Pieces and Peas to it.Mix well and then add Water to it.
Add Garam Masala Powder and mix.
6. Add Red Food Colour and also add Cream to it.Add Coriander Leaves to it and mix well.
7. Simmer well and check that the Paneer gets cooked in the gravy and becomes soft.
8. Check the Seasoning and adjust accordingly.
9. Temper with Ghee and Red Chilli Powder.
10. Serve Hot garnished with Chopped Coriander Leaves and Cream.
