STUFFED CAPSICUM
 
" Capsicums stuffed with a Delicious Filling and served in Tomato Gravy."
 
Serves 6-8
 
INGREDIENTS
750 gms-1 Kg - Mini Capsicums
Stuffing
3 Tbsp- Oil
1 Tsp- Cumin Seeds
3 Nos-Green Chillies ( Chopped Finely )
1 Inch Piece-Ginger ( Chopped Finely )
2 Medium Size Onion ( Chopped )
2 Tcup- Boiled Mashed Potatoes
½ Tcup- Grated Paneer
3 Tbsp- Peas ( Blanced )
1 Tsp- Salt ( To Taste )
1 Tsp- Red Chilli Powder
½ Tsp- Pepper
3 Tbsp-Chopped Coriander Leaves
Gravy
3 Tbsp-Oil
3 Nos-Green Chilles and 1 inch Piece Ginger Made to Paste
5 Tbsp- Readymade Tomato Puree
2 Tbsp-Tomato Ketchup
1 Tsp-Salt ( To Taste)
½ Tsp-Red Chilli Powder
1 Tsp- Coriander Powder
½ Tsp- Mango Powder
1/3 Tcup- Chopped Coriander Leaves
100 ml-Fresh Cream
Garnish
Chopped Coriander Leaves
Green Chill and Ginger Juliennes
Pepper Powder
 
METHOD
1.Remove cap of the Capsicum and scoop it out.
 
Stuffing
1. Heat Oil and add Cumin Seeds.Then add Green Chill and Ginger .Next add Onions and sauté well.
2. Add Potatoes,Paneer,Peas and the Seasonings.Mix well and add Coriander Leaves.
Check the Seasoning and keep aside.

Gravy
1. Heat Oil and add Ginger and Green Chilli Paste to it.Saute well and then add the Tomato Puree and Ketchup to it.Add the Seasonings and mix well.
2. Add Coriander Leaves and Cream and mix .Add very little Water to it and check the Seasoning.Simmer the Gravy well.
 
Assembling
1.Stuff the Capsicums with Paneer Filling .Put in Greased Baking Dish and Bake in Preheated Oven at 200 Degree Celsius for 15 minutes till the Capsicums are done.
2. To serve,take out the Capsicums in serving bowl and pour hot gravy over them.Garnish with Chopped Coriander Leaves,Green Chilli and Ginger Juliennes and also sprinkle Pepper Powder.
3.Serve hot.
