- Serves-4

- INGREDIENTS
- 700 gms- Leg of Pork
7 Tbsp- Oil
1 1/3 Tcup- Cubes of Potatoes
1/3 Tcup- Finely Chopped Onions
100 gms- Pickled Onions
Salt- To Taste
¼ Tcup- Finely Chopped Coriander Leaves
- Oil For Deep Frying the Potatoes

- Marination
- ½ Tcup- Malt Vinegar
1 ½ Tsp- Peppercorns
1 ¾ Tsp- Sugar
8 Nos- Green Cardamom
8 Nos- Cloves
3 Nos- Green Chillies ( Slit,Deseeded )
Salt- To Taste

- Paste
- 8 Nos- Whole Red Chillies
10 Sticks Cinnamon ( 1 inch each )
1 Tsp- Cumin Seeds
5 Tsp- Coriander Seeds
½ Tsp- Turmeric Powder
1 Tbsp- Chopped Garlic
3 Tbsp- Chopped Ginger
7 Tbsp- Malt Vinegar

- METHOD
- 1. Clean,Remove the Excess Fat from the Pork
and then Debone and cut into 1 Inch Cubes.
2. Deep Fry the Potato Cubes in Hot Oil and Drain Well and Keep
Aside.
3. Marination- Pound Pepper with a Pestle.Add all the other Ingredients
of the Marination to it and Mix Well. Leave the Pork Pieces in
it for 1 Hour.
4. Paste-Add all the Ingredients of the Paste in a Blender along
with ¼ Tcup Water and make a Fine Paste.
5. Heat Oil in a Kadhai and then to it add Finely Chopped Onions
and sauté well till Golden Brown.
- Add the Paste and Saute well till the Oil
leaves the Masala.
- Add Pork along with the Marinade and Stir
for 2-3 Minutes.Add 5 Tcup Water .
- Cover and Simmer well until Pork is Tender.
6. Add Potatoes and Pickled Onions and Cook until Potatoes are
Soft.Add Salt and mix.
7. Check the Seasoning and adjust accordingly.
8. Serve Hot Garnished with Chopped Coriander Leaves.
9. Serve Hot with Boiled Rice.
